Recipe for mince curry to be served with freshly made flaky roti

Ingredients:

  • 1 kg mince
  • Oil
  • 2 onions
  • 3 curry leaves
  • 1 tsp Kashmiri spice
  • 1 tsp Mother-in-law spice
  • 1 tsp medium roasted masala
  • 1 tsp borrie (turmeric)
  • 1 tsp ginger
  • 1 tsp garlic
  • 4 potatoes
  • Fresh coriander

Method

  1. Heat oil in a large pot, enough to cover the base
  2. Add finely chopped onion and curry leaves.
  3. Allow to simmer until onions are soft and translucent.
  4. Add all the spices and cook until well blended.
  5. Add the ginger and garlic and stir well.
  6. Cook until sauce has browned slightly.
  7. Now add the well rinsed and drained mince, as well as the potatoes.
  8. Cook on a medium heat until potatoes are soft.
  9. Sprinkle with freshly chopped coriander and serve with flaky roti or white rice.
